Pancakes are mainly associated with Shrove Tuesday, which is the last day before Lent. 'Shrove' is derived from the word: 'Shrive' referring to the act of penitence and confessing sins, followed by the period of abstinence and fasting during Lent. Many of the foods which Christians would not eat during Lent included items such as eggs, milk and fats, which would not keep for the 40 days of Lent; therefore, rather than wasting them, they were eaten up in a feast on Shriven Tuesday. Consequently, dishes like pancakes, which are made up of fats, eggs and milk (with the addition of flour to give more substance) have become associated with Shrove Tuesday.
The French version is ‘Mardi Gras’, meaning ‘Fat Tuesday’.
On Pancake Tuesday, English pancakes are traditionally served with lemon juice and sugar. Other sweet toppings include chocolate hazelnut sauce, fruit such as strawberries or banana slices, ice cream or a combination of any of the above.
However, it doesn't have to be Shrove Tuesday to enjoy our delightful recipe for pancakes and the pancake recipe here can be used for both sweet and savoury pancakes.
